What you need

cup coconut flour

tbsp flour

oreo cookie
egg

oz banana

cup vanilla protein powder

tbsp non-fat greek yogurt

cup protein powder
Instructions
0 Preheat oven to 350°F and line a mini 5” loaf pan with parchment paper. 1 In a large bowl, whisk (hand mixer recommended) together mashed banana, yogurt and eggs. 2 In another bowl, flour, unflavored protein powder, vanilla protein powder and baking. 3 Add dry mix to wet, and gently fold until combined.DO NOT OVER-MIX or protein powder and gluten from wheat flour will make the bread dense. 5 Add chopped cookies (reserve a few for the top) and gently fold. 6 Bake for 40-50 minutes, covering with a foil tent after 30 minutes.A toothpick inserted into center should come out dry. 8 Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.View original recipe
