What you need

tsp fresh ginger

cup water

tsp lemon juice

tbsp tomato paste

tsp cooking oil
cup kale

cup low-sodium broth

tsp ground cumin

tsp coriander powder

tsp garlic
Instructions
Peel sweet potato and chop into ½” cubes; De-stem and chop kale. Pour oil over medium heated pot or saucepan and fry onion, ginger and garlic 2-3 min. Add tomato paste, ⅓ cup water and spices, stir and cook about a minute. In a bowl, stir powdered peanut butter and water. Add peanut butter blend, broth, sweet potato to pot and mix. Cover, turn heat to high and bring to a boil. Reduce to medium-low and simmer 15 min until sweet potato is tender. Stir in kale and lemon juice, and simmer another 1-2 min.
