Vanilla Oats with Caramelized Banana

Whisk together oats, water, milk and salt in a saucepan over medium heat and bring to a boil. Reduce heat to a low simmer and cook, uncovered for 5 minutes, stirring occasionally. Caramelize the bananas: While the oats cook, heat a skillet on medium and lightly spray it (1-2) with cooking spray. Slice the banana into strips lengthwise and place on pan. Cook about 3 minutes or until golden brown, gently flip to other side and cook for another minute. Transfer oats to a bowl and stir in vanilla, cinnamon and sweetener if using.
