0 Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper. 1 In a bowl, whisk flour, protein powder, coconut flour and baking soda. 2 In a large bowl, whisk together hot water, applesauce, lemon juice, melted butter and vanilla. 3 Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense. 5 Add in trail mix and fold. 6 Pour batter into pan, and bake for 22-25 minutes.Don’t let the batter sit out. 8 A tester inserted into the center should come out clean and center of cake springy to touch. 9 Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely. Frosting: 11 Let cool completely first. 12 In a small bowl combine yogurt, protein powder, peanut butter and optional stevia sweetener. Mix until uniform.Taste to check sweetness; Add more sweetener if needed. 14 Spread frosting over cake.Top with trail mix.View original recipe
