What you need

cup rolled oats
tsp baking powder

tsp unsalted butter

tsp vanilla extract

tbsp water

tbsp chocolate chips
Instructions
1 Preheat oven to 325°F. 2 In a large bowl, combine oats, flour, powdered PB, and baking powder, and mix well. 3 In a small bowl, whisk egg white until lightly frothy, add in butter, vanilla and sweetener and whisk again. 4 Pour in wet mix into dry and add 2 Tbsp water. 5 Stir until just combined. Do not over-mix or the cookie will get tough. 6 Gently fold in chocolate chips if using, leaving some for topping. 7 Scoop out about 2 Tbsp mixture at a time, and place on a cookie sheet. Flatten and shape with back of spoon. 8 Cookies will keep shape and not spread when baking. 9 Lightly press on remaining chocolate chips. 10 Bake for 12 min. 11 Allow to cool about 10 minutes, remove from pan and enjoy!View original recipe
