Super Soft Flourless Chocolate Chickpea Cookies

Delicious soft flourless Chocolate Chickpea Cookies made with garbanzo beans, cocoa powder and coconut flour - no normal flour! These healthy chickpea cookies are gluten free, sugar free, dairy free and Vegan with no sugar, chocolate, peanut butter or eggs!

What you need

cup chick peas

tbsp almond butter

cup maple syrup

tbsp vanilla extract
cup cacao powder

tbsp coconut flour

tsp baking powder
Instructions
1 Preheat oven to 350°F and line a baking sheet with parchment paper. 2 In a food processor, combine chickpeas, almond butter, maple syrup and vanilla, and process until smooth, but slightly textured. 3 Add cacao powder, coconut flour and baking powder and pulse until combined. 4 Transfer to a bowl. 5 Scoop out about 2 Tbsp mixture at a time, roll (use slightly damp palms), flatten or shape as desired (cookies will not spread) and place on prepared baking sheet. 6 Bake for 10 min. Let rest on pan for about 5 minutes to firm up. Transfer to wire rack to cool completely.View original recipe
