Spiced Lentil Beet Burgers

Everyone loves a good burger, but these Spiced Lentil Beet Burgers are just great! Think they look pretty? Well they taste even better! The lentils serve as a ground-beef replacement and the beets give them a nice earthy flavor - and that hamburger look too! Granted they don’t taste like it, but they’re way way way better than those regular veggie burgers out there. A real flavor-overload with those spices in there!

What you need

tsp olive oil

tsp chili powder
cup mushrooms

tbsp red onion

tsp cayenne pepper
tsp salt

tsp cumin powder

tsp garlic powder

cup rolled oats
cup dried lentils

tsp pepper
Instructions
- Preheat the oven to 400°F. - Clean beet, trim off top and roots, and peel off the skin. Chop into 1” chunks and roast for 30 mins or until soft to pierce with fork. - Rinse lentils and boil with 1½ cup water in pot over medium heat, stirring occasionally, 20 min. Set aside to cool. - Heat oil on a skillet over medium and fry onions and mushrooms until soft. Allow to cool. - Pulse oats in a food processor for 30 sec to make oat flour. - Add beets, onions, mushrooms and spices, and pulse to form a coarse-grainy paste. Scrape down sides as needed. - Divide mixture into 3 parts and flatten into disks using palms. - Bake for 25 min, flipping halfway.View original recipe
