Spiced Chickpea Lettuce Cups

Never really been a fan of lettuce wraps here, but these Spiced Chickpea Lettuce Cups really caught my attention. 🥬Its one of those low-investment high-return recipes coz you barely put in any time, but get so much flavor and quite a huge quantity of it too! Great for a quick lunch, especially one on-the-go.🍱They’re also a nice alternative to sandwiches, being lighter in calories, full of protein and rich in fiber as well.

What you need

fl oz lemon juice

cup cucumber

cup red onion

cup chickpea

tsp onion powder

tsp cayenne pepper

tsp chili powder

tsp garlic powder

tsp ground cumin

tsp paprika
Instructions
Drain the chickpeas but don’t let them get too dry. Transfer to a large bowl and warm in a microwave for about 30 seconds. In a small bowl, combine the spices to mix evenly. Add spices to chickpeas and toss to coat evenly. Divide lettuce leaves in 2's placing them on top of each other to make 8 cups. Spoon out chickpeas, dividing equally, onto lettuce leaves and top with sliced onions and cucumber. Squeeze some lemon juice on the top if desired, and serve!View original recipe
