Soft Gluten Free BANANA BREAD COOKIES with Protein Powder Icing

A quick and easy, delicious, healthy, and perfect gluten-free banana bread alternative in cookie form. Made with oats and coconut flour, this recipe requires no oil and minimum sweetener, topped with a sweet protein powder icing. This recipe was inspired by a very overripe banana that needed to be used!

What you need

tsp ground cinnamon

tbsp almond milk

tsp vanilla extract

cup coconut flour

tbsp maple syrup

tsp baking soda

tbsp creamy peanut butter

cup rolled oats
Instructions
Preheat oven to 350°F. In a bowl, mash banana with back of a fork. Add wet ingredients (egg, peanut butter, maple syrup, vanilla extract). Process oats in a food processor to make rough "flour". Add oats, coconut flour, baking soda and cinnamon to bowl and mix. Place bowl in the fridge for about 10 minutes to chill. Scoop 2 Tbsp mixture at a time, roll into balls using hands, and place on a cookie sheet. Flatten or shape (cookies will not spread). Bake for 11 min or until golden brown. For the protein powder icing, mix ½ scoop Vanilla Protein Powder with 1 Tbsp Almond Milk/Water until smooth and drizzle over cooled cookies.View original recipe
