S'mores Chia-Quinoa Pudding

S'mores Chia-Quinoa Pudding inspired by your favorite campfire dessert! Chia pudding has such a weird consistency, so I had to find a way to make it tolerable. Now finishing a bowl actually leaves me wanting s'more!

What you need

tbsp mini marshmallows

tsp ground cinnamon

tsp vanilla extract

cup cooked quinoa

cup almond milk

tbsp chia seed

splash truvia
Instructions
- Whisk together all ingredients except quinoa, in a bowl. - Cover and place in a refrigerator for at least 4 hours, and will be thickest after 8-10 hours. - Fold in the quinoa once the chia pudding has thickened. Add a tbsp of Almond milk if you want it thinner. - Serve chilled with some chocolate, grahams and toasted marshmallows (broil them in an oven until golden brown)!View original recipe
