Roasted Breakfast Potatoes

Crispy potatoes first thing in the morning? These Roasted Breakfast Potatoes are so much better than that greasy stuff you get at a restaurant, and so easy, you're gonna have to try hard to mess it up! Season them to a smoky paprika flavor, or a combination of rosemary and thyme.

What you need

tbsp olive oil

cup red onion

cup red bell pepper

tsp paprika
tsp salt

tsp black pepper

tsp garlic powder

tsp ground cumin
Instructions
Preheat the oven to 425 degrees F. Dice the potatoes into ½ inch size cubes. In a large bowl, toss all the ingredients together until vegetables are evenly coated with oil and spices. Spread the mix evenly on a baking sheet lined with parchment paper and pop in the oven. Bake for about 30-40 minutes until potatoes are crisp and brown, shaking the pan halfway.
