0 Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper. 1 In a large bowl, whisk together applesauce, yogurt, almond milk, eggs and vanilla. 2 In another bowl, whisk whole wheat pastry flour, chocolate protein powder, unflavored protein powder, black cocoa powder, coconut flour, stevia sweetener and baking powder. 3 Add dry mix to wet, and gently fold until combined.DO NOT OVER-MIX or protein powder and gluten will from wheat flour will make the bread dense. 5 Add in most of the chopped chocolate vanilla sandwich cookies, reserving a few for the top.Gently fold until combined; Do not over-mix. 7 Pour batter into prepared loaf pan.Top with more crushed sandwich cookies. 9 Bake for 40 minutes, cover with foil tent and bake another 20-25 minutes.A toothpick inserted into center should come out dry. 11 Cool for 15 minutes, then remove from pan and transfer to a wire rack to cool completely, about 40 minutes and cut into slices.View original recipe
