0 Preheat oven to 375°F and line 12 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan). 1 In a large bowl, combine cornmeal, flour, vanilla protein powder, unflavored protein powder and baking powder. 2 In another bowl, whisk together applesauce, almond milk, eggs and melted. 3 Pour wet mix into dry, and gently fold until combined.DO NOT OVER-MIX or this will make dense cornbread. 5 Divide the batter among muffin cups, filling about ⅔ way to the top 6 Pour mixture into prepared pan and bake 18-20 minutes or until a toothpick inserted into center comes out with dry (or few crumbs)View original recipe
