A summery Lemon Blueberry Vanilla Protein Oats with the perfect balance of sweet and tangy! Sneak in some cauliflower rice for added bulk, add on greek yogurt, a chopped up protein bar and a splash of vanilla to the top, and you have a complete nutritious high protein breakfast!

Cook Oats: 1 Whisk together oats and water in a saucepan over medium heat. Simmer and let cook, uncovered for about 5-7 minutes, stirring occasionally. 2 If oats get too thick, add water to thin it out. Prepare Cauliflower: 1 Pulse cauliflower in a food processor and until finely ground into “rice” form. 2 Transfer to a bowl, cover with a damp paper towel and microwave on high for about 30 seconds. Assemble: 1 Add cauliflower, protein powder and lemon juice to oats and stir gently with folding motions (you don't want to make it mushy!). Add water 1 Tbsp at a time to thin. 2 Re-heat in the microwave for about 30 seconds. 3 Top with blueberries, yogurt, a splash of vanilla, and serve hot!View original recipe
