What you need

oz ripe banana

cup coconut flour

tsp baking powder

tsp cinnamon powder

cup protein powder

tsp vanilla extract

tbsp flour

tbsp pecan nuts

0 Preheat oven to 350°F and line a loaf pan with parchment paper. 1 In a large bowl, whisk (hand mixer recommended) together mashed banana, pumpkin puree, yogurt, eggs and vanilla extract. 2 In another bowl, combine flour, unflavored protein powder, vanilla protein powder, baking powder, pumpkin pie spice and cinnamon. 3 Add wet mix to dry, and gently whisk until combined.DO NOT OVER-MIX or protein powder will make the bread dense. 5 Pour into prepared loaf pan.Top with pecans if you prefer. 7 Bake for 60 minutes, covering with a foil tent after 30 minutes.A toothpick inserted into center should come out dry. 9 Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.View original recipe
