Preheat oven to 425°. Line a baking sheet with foil, spray with nonstick spray and place salmon on it, skin-side down. - Sprinkle with salt and pepper. In a small bowl, combine olive oil, mustard and herbs. Spread mustard sauce over the fillet and bake for about 10-12 minutes, until cooked through and top is crusty. Serve hot.
