Previous Day: 1 Preheat oven to 375°F and bake croissants according to package instructions (about 10 min for small croissants). 2 Let cool and keep overnight in an airtight container. Day of: 4 Preheat oven to 375°F and line a baking pan with parchment paper. Almond Filling: 6 In a bowl combine vanilla protein powder, almond flour, unsweetened applesauce, egg and salt. 7 Divide mix into ⅔ and ⅓. Sugar Syrup: 9 Whisk water and monkfruit sweetener in a bowl. Assemble: 11 Cut croissants in half, length-wise (tip: use serrated knife). 12 Brush sugar syrup on the bottom half surface.Use ⅔ filling mixture and spread filing on bottom half of croissants. 14 Place top halves on.Brush more sugar syrup on top and spread ⅓ filling mixture on top.Sprinkle on sliced almonds.
