Flourless White Bean Vanilla Cake

1 Preheat oven to 325°F (350°F for metal pan). 2 Add beans to a food processor and process until smooth and creamy, about 30 seconds. 3 In a large bowl, whisk together rest of the ingredients. 4 Transfer pureed beans to bowl and whisk to combine. 5 Grease a 6½” diameter glass cake pan and pour batter in, flattening with a spatula. 6 Bake for 40 minutes or until a toothpick inserted into the center comes out dry. 7 Remove from oven and let sit 20 minutes to cool before removing from the pan. 8 Combine yogurt and sweetener, and spread on cake as frosting.
