Cut the potato into large wedges, place in a pot over medium heat and cover with water. Bring to a boil, then reduce heat to a low simmer, cover and cook for 15 minutes until potatoes are tender but still firm. Drain and transfer potatoes into a bowl. Add the milk, green onion, italian seasoning, salt and pepper, and mash until smooth and uniform. While still hot, fold the cheese into the mash until melted and even.
