1 Combine all the ingredients except the chocolate chips in a bowl - pancake mix, water, maple syrup, vanilla extract and baking powder.
2 Stir in chocolate chips, reserving a few.
3 Lightly grease a microwave-safe mug with oil or cooking spray.
4 Pour in pancake batter.
5 Microwave on high for about 1 min 15 seconds - top should be dry to touch.
6 Sprinkle on remaining chocolate chips, let cool for a few minutes and enjoy!
