Preheat oven to 375°F. Mix nut butter, eggs and vanilla in a large bowl until uniform. Add rest of the ingredients and mix well. The dough will be a little runny. Scoop out 1 Tbsp of dough at a time onto a cookie sheet, about 2 inches apart. Bake for about 11 minutes or until edges are nicely browned. They will seem soft, but don’t overbake!
