Preheat oven to 350°F (325°F for glass pan). Grease an 8" x 4" loaf pan and line with parchment paper. In a large bowl, mash the bananas with a fork. Add eggs and vanilla extract, then blend with a hand mixer. In a small bowl, stir together the coconut oil and cocoa. Add the cocoa mixture and peanut butter to the banana mixture and blend. In a medium bowl, combine the coconut flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and whisk until just combined. Pour the batter into the prepared loaf pan and top with chocolate chips. Bake for 50 minutes. Cool for 15 minutes in the pan.
