Surprisingly good No Bake Chickpea Protein Cookies for an easy and quick dessert! These healthy chickpea cookies use protein powder, peanut butter powder and coconut flour for a sugar free and low calorie recipe. Vegan and gluten free too!

What you need

cup chick peas

tbsp creamy peanut butter

tbsp maple syrup

tsp vanilla extract

cup coconut flour

tbsp chocolate chips
Instructions
1 Place chickpeas in a food processor or blender, process until roughly broken down. 2 Add remaining ingredients except coconut flour and chocolate chips - chickpeas, peanut butter powder, vanilla protein powder, almond milk, peanut butter, maple syrup and vanilla extract. 3 Pulse until smooth, about 1 minute. Add more milk to thin if needed. 4 Transfer to a bowl, add coconut flour and chocolate chips; Fold to combine. 5 Divide into 12 pieces, roll into balls and flatten into cookies.View original recipe
