Chicken & Broccoli Curry

Exotic flavors are how I get my veggies in! This Chicken & Broccoli Curry is delicious and nutritious at the same time, and most definitely does not taste like that bowl of raw greens. Pair it with some naan or rice and even kids would want a second serving!

What you need

tsp olive oil

cup red onion

cup tomato
tsp salt
tsp ground cinnamon

tsp cayenne pepper

tsp black pepper

cup chicken breast

tsp ground cumin
cup broccoli

tsp turmeric powder

tsp curry powder
tsp garlic
Instructions
- Steam the Broccoli in a microwave for 1 minute and set aside. - Heat the oil in a large pot over medium heat, and fry the onions for about 5 minutes until they are translucent. - Add the garlic and sauté for another minute. - Stir in the diced tomatoes and spices, and about ½ cup water. Let cook for about 3-4 minutes until the spices are fragrant. Season with salt, pepper. - Add the greek yogurt, broccoli and chicken, stir, bring to a low simmer and cook for around 3 minutes, until slightly thickened and chicken is warmed through.View original recipe
