Super simple Biscoff Protein Bars with a protein oat bar, a high protein cookie butter and white chocolate. Make Speculoos protein bars with Lotus Biscoff or homemade cookie butter for a healthy snack, dessert or protein boost!

0 Line an 8x4” loaf pan with parchment paper; leave an overhang to lift out later. Base: 2 Combine dry ingredients in a bowl - crushed biscoff biscuit, vanilla protein powder, unflavored protein powder, oat flour and coconut flour. 3 Add in milk - little at a time - and mix. Mixture will be like a dough. 4 Transfer to prepared pan and press down. Protein Biscoff: 6 In the same bowl, stir Biscoff cookie butter, vanilla protein powder, unflavored protein powder and coconut flour to form a thick mixture. 7 Spread on top of base and use back of spoon/spatula or fingers to smoothen. Topping: 9 Place chocolate chips in a bowl, add in a bit of coconut oil, and place over a bowl of boiling water. Stir until melted. 10 Spread chocolate on bar and use back of spoon to smoothen.Top with crushed biscoff cookies. 12 Transfer to freezer to cool about 5-10 minutes. 13 Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 8 bars.View original recipe
