1 Preheat oven to 350°F and line an 8" x 3½" loaf pan with parchment paper or foil and grease. 2 Roughly mash banana with a fork; You should have about 1 cup. 3 Place banana, eggs, yogurt, coconut oil, milk, maple syrup and vanilla to a blender or food processor and blend for about 15 seconds until smooth. Transfer to a large bowl. 4 In a medium bowl, combine flour, protein powder, baking powder, cinnamon and salt. 5 Add dry ingredients to wet, and gently fold to combine. Do not overmix. 6 Pour batter into prepared loaf pan. 7 Bake for 30 minutes, create a tent out of foil, loosely cover the top, and bake another 20-25 minutes. A toothpick inserted into center should come out dry. 8 Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.View original recipe
