What you need

fl oz olive oil cooking spray

tsp onion powder

tsp dijon mustard

tsp parsley

tsp black pepper

tsp table salt

tsp lemon juice

tsp garlic powder
Instructions
1. Preheat oven to 425°F or prepare your air fryer. 2. Boil potatoes for about 20 minutes until they can be easily pierced with a fork. 3. Drain the potatoes and let them cool for 5 minutes. 4. Line a baking sheet with parchment paper and lightly grease it with oil spray. 5. Place potatoes on the baking sheet about 1 inch apart. Press down with a potato masher or fork to flatten them to about ½" high (thinner will result in crispier potatoes). 6. Lightly spray olive oil or butter on top of the flattened potatoes and sprinkle with ¼ tsp salt, pepper, garlic powder, and onion powder. 7. Roast for about 30 minutes in the preheated oven or air fry at 400°F for 20 minutes until golden brown around the edges. 8. In a small bowl, combine the Greek yogurt, Dijon mustard, lemon juice, Italian seasoning/herbs, and black pepper for the Seasoned Dijon Dip. 9.
