Prepare Apple Cider: 1 Heat apple cider in a small pot over medium until bubbling; Reduce to simmer and cook until reduced to ½ cup. 2 Should take about 25 minutes. Set aside to cool (about 10 minutes). Cake: 4 Preheat oven to 350°F and grease a 8x8” baking pan with cooking spray or use parchment paper. 5 In a large bowl, whisk reduced apple cider, almond milk, Greek yogurt, almond butter and egg. 6 In another bowl, mix flour, vanilla protein powder, unflavored protein powder, cinnamon, cardamom, nutmeg, baking powder and baking soda. 7 Add dry mix to wet and gently fold with a large spoon until just combined.DO NOT OVER-MIX or the protein powder will make the batter tough. 9 Transfer batter into pan and bake for 18 minutes or until a toothpick inserted into the center comes out with just few crumbs attacked. 10 Let cool for 10 minutes and remove from pan.Transfer to a cooling rack to cool. Topping: 13 Brush top of cake with melted butter. 14 Sprinkle on sugar, and then slice into pieces.View original recipe
