Air Fryer Beef-Stuffed Potato Croquettes

Crispy on the outside and LOADED on the inside. These Air Fryer Beef-Stuffed Potato Croquettes take leftover mashed potatoes to a whole other level! A juicy meat filling inside crispy potatoes without breadcrumbs, these are perfect for a paleo gluten-free party appetizer!

What you need

tsp olive oil

tbsp green onion
tsp salt
oz ground beef

tbsp onion
tsp garlic

cup green pepper

tbsp parsley

tbsp almond milk

cup bread crumbs
Instructions
1 Preheat oven to 400°F or use Air-Fryer. Prepare potato coating: 1 Cut the potato into large wedges, place in a pot over medium heat and cover with water. 2 Bring to a boil, reduce heat to simmer, cover and cook for 15 minutes until potatoes are tender but still firm. 3 Drain and mash with green onion, Italian seasoning, salt and pepper. Prepare filling: 1 Heat oil in a skillet over medium and fry the onions and garlic for 2 minutes until translucent. 2 Add ground beef, vegetables and seasoning and cook for 5-7 minutes until meat is no longer pink. Assemble: 1 Prepare 2 shallow bowls with almond milk in the first and optional bread crumbs in the second. 2 Divide mashed potatoes and filling into 28 and 14 equal portions respectively. 3 Use hands to shape a potato portion into an oval patty. Place a portion of filling on it, and cover with another potato portion. Roll into a croquette shape. 4 Dip the croquettes first into the almond milk and then coat with breadcrumbs, if using. 5 Air-fry for 20 minutes at 375°F until golden brown and crisp, or bake at 400°F for 25 minutes.View original recipe
