Preheat oven to 400°F and line a baking sheet with parchment paper. In a skillet over medium heat, lightly fry onion and mushroom in ¼ tsp Olive Oil. Place the flatbread on the baking sheet. Add toppings: drizzle ½ tsp Olive Oil, sprinkle on 2-3 Tbsp cheese, tear and spread spinach, spread the cooked mushrooms & onion, then add the remaining cheese.
