Soak chickpeas in a bowl of water for 24 hours. Place all the falafel ingredients in a food processor and pulse until mixture is coarse. Shape falafel mixture into small balls using hands. Air-fry for about 12 minutes at 375°F until golden brown and crisp, or bake at 400°F for 15 minutes. Combine all ingredients for the Tzatziki sauce together in a bowl and serve with falafels!
