Crispy potatoes first thing in the morning? These Roasted Breakfast Potatoes are so much better than that greasy stuff you get at a restaurant, and so easy, you're gonna have to try hard to mess it up! Season them to a smoky paprika flavor, or a combination of rosemary and thyme.

Preheat the oven to 425 degrees F. Dice the potatoes into ½ inch size cubes. In a large bowl, toss all the ingredients together until vegetables are evenly coated with oil and spices. Spread the mix evenly on a baking sheet lined with parchment paper and pop in the oven. Bake for about 30-40 minutes until potatoes are crisp and brown, shaking the pan halfway. Sprinkle with some salt and pepper and serve hot!
