Soft Gluten Free BANANA BREAD COOKIES with Protein Powder Icing

A quick and easy, delicious, healthy, and perfect gluten-free banana bread alternative in cookie form. Made with oats and coconut flour, this recipe requires no oil and minimum sweetener, topped with a sweet protein powder icing. This recipe was inspired by a very overripe banana that needed to be used!

Preheat oven to 350°F. In a bowl, mash banana with back of a fork. Add wet ingredients (egg, peanut butter, maple syrup, vanilla extract). Process oats in a food processor to make rough "flour". Add oats, coconut flour, baking soda and cinnamon to bowl and mix. Place bowl in the fridge for about 10 minutes to chill. Scoop 2 Tbsp mixture at a time, roll into balls using hands, and place on a cookie sheet. Flatten or shape (cookies will not spread). Bake for 11 min or until golden brown. For the protein powder icing, mix ½ scoop Vanilla Protein Powder with 1 Tbsp Almond Milk/Water until smooth and drizzle over cooled cookies.
