Preheat oven to 350°F. Wash and cut the squash in half along the length, scoop out the seeds and bake for 30 minutes cut-side down on a baking sheet. Shred with a fork when done and set aside. Sauté onions on a non-stick pan with heated oil for about 3 minutes on medium heat, set aside. Steam the asparagus in a microwave for about a minute. Whisk together the egg whites, spices and all the vegetables. Pour the mixture in the pan, cover and cook on low-medium heat for about 10 minutes or until eggs are done. Slice and plate!
