1. Preheat oven to 425°F or prepare your air fryer. 2. Boil potatoes for about 20 minutes until they can be easily pierced with a fork. 3. Drain the potatoes and let them cool for 5 minutes. 4. Line a baking sheet with parchment paper and lightly grease it with oil spray. 5. Place potatoes on the baking sheet about 1 inch apart. Press down with a potato masher or fork to flatten them to about ½" high (thinner will result in crispier potatoes). 6. Lightly spray olive oil or butter on top of the flattened potatoes and sprinkle with ¼ tsp salt, pepper, garlic powder, and onion powder. 7. Roast for about 30 minutes in the preheated oven or air fry at 400°F for 20 minutes until golden brown around the edges. 8. In a small bowl, combine the Greek yogurt, Dijon mustard, lemon juice, Italian seasoning/herbs, and black pepper for the Seasoned Dijon Dip. 9. Serve the crispy smashed potatoes with the dip and enjoy!
