I may or may not have accidentally purchased over 10lbs of chicken, so here's a super easy baked MAPLE DIJON GLAZED CHICKEN BREAST with some ASPARAGUS on the side. All the flavor and nutrition ready in under 30 minutes! I’d been meaning to do a maple dijon something - salmon to be more specific - but those filets were too far back in my freezer. So it was either emptying out everything in front and having to play a game of tetris to fit it all back, or make some good use of all that chicken.

Preheat oven to 350°F. Pound the chicken breast thin. Create a foil container and place it on a baking sheet. Fry the chicken on a pan for 30 seconds on each side to get a nice browning. In a bowl, mix together 1.5 tsp melted butter, 2 tsp maple syrup, 2 tsp whole grain Dijon mustard, and 1.5 tsp minced garlic to create the sauce. Pour ⅓ of the sauce into the foil pack. Place the browned chicken breast in the foil pack and pour another ⅓ of the sauce over it. In a separate bowl, toss the asparagus with 0.5 tsp melted butter, 1 tsp minced garlic, ⅛ tsp salt, and ⅛ tsp pepper. Place the asparagus in the pan next to the foil pack containing the chicken. Bake for 20 minutes at 350°F. Once baked, pour the remaining ⅓ of the sauce on the chicken.
