- Finely dice zucchini. - Transfer to bowl, add rest of the ingredients and mix. - Divide mixture into 3 and use hands to shape them into patties, do not compact meat. - Heat a nonstick skillet on medium-low, lightly spray cooking spray and place patties on. Cook for 4 min, flip and cook for another 4 min or until turkey is cooked and no longer pink inside. - Wipe skillet and toast muffins for 30s each side till golden brown. Transfer to work surface. - Assemble burgers with spinach, patty and toppings.
