Healthy blueberry cheesecake croissant - An easy, high protein, lower calorie Costco copycat recipe with protein powder, Greek Yogurt and cottage cheese.

Preheat and Prep: Preheat your oven to 375°F (190°C) and line a small baking sheet with parchment paper.
Make the 2-Minute Jam: In a small saucepan over medium heat, combine the blueberries, monkfruit sweetener, and a splash of water. Simmer until the berries burst and the mixture thickens into a jam; be sure to stir frequently and add more water as needed.
Remove from heat and let cool.
Blend the Cheesecake Filling: In a small bowl, combine the Greek yogurt, cottage cheese, vanilla protein powder, and unflavored protein powder.
Use an immersion blender to blend until completely smooth and creamy.
Slice and Stuff: Slice your croissant horizontally, leaving the back intact so it opens like a book. Spread most of the cheesecake filling inside, followed by most of the blueberry jam.
The Topping: Gently close the croissant. Spread the remaining cream and blueberry jam on top.
Optionally, top with sliced nuts or seeds for that bakery look!
Bake: Place the croissant on your prepared baking pan and bake for 10 minutes until the croissant is golden-crisp and the filling is warm.
Serve: Let it cool for a couple of minutes, cut in half and dive into your delicious, macro-friendly pastry!
