Preheat & Prep: Preheat your oven to 350°F (175°C) and lightly grease an 8-inch round baking pan.
Whisk the Dry Ingredients: In a medium mixing bowl, thoroughly whisk together your dry ingredients: vanilla protein powder, peanut butter powder, flour, coconut flour, zero-calorie sugar alternative, and baking soda.
Ensure no clumps of protein powder remain.
Combine the Wet Ingredients: In a separate large bowl, whisk together the unsweetened applesauce, whole egg, egg whites, and almond butter until the mixture is completely smooth.
Fold the Batter (Do Not Over-Mix): Gently fold your dry mixture into the bowl of wet ingredients, using a large rubber spatula until just combined. Stop the exact second the last dry flour patches disappear!
Fold in the Chocolate: Carefully fold in your sugar-free chocolate or chocolate chunks, reserving a few pieces for the top.
Scoop & Top: Scoop the dough into 6-8 large, rustic, heaping portions directly into your prepared 8-inch baking pan. Press the reserved chocolate chunks into the top of the scoops.
