In a bowl combine cottage cheese, Greek yogurt, vanilla protein powder, peanut butter powder and peanut butter.
Use an immersion blender or food processor.
Dip rice cake in coffee, transfer into large ramekin (be quick but gentle).
Spread half caramel cream mixture on top (smoothen with back of spatula or spoon).
Sprinkle on half the toffee bits.
Repeat with second rice cake + remaining caramel cream.
Cover and refrigerate 1 hour.
This helps the flavors mold together.
Dust with cocoa power (use sieve) and top with remaining toffee bits.
