Individual Pumpkin Tiramisu is an no-bake Fall dessert you’re going to love. This easy recipe uses coffee-soaked rice cakes layered with a high protein, low fat pumpkin cream to create a single-serving treat with 34g of protein.

In a bowl beat softened cream cheese, Greek yogurt, pumpkin puree, vanilla protein powder, pumpkin pie spice and milk(as needed).
Dip rice cake in coffee, transfer into large ramekin (be quick but gentle).
Spread half pumpkin cream mixture on top (smoothen with back of spatula or spoon)
Repeat with second rice cake + remaining pumpkin cream.
Cover and refrigerate 1 hour.
This helps the flavors mold together.
Dust with cocoa power (use sieve).
