Bake the ultimate high protein healthy pumpkin banana bread! A moist, satisfying protein loaf that's macro-friendly with no added refined sugar.
gMashed Bananafrom completely ripe bananas (½ cup + 2 Tbsp)
gPumpkin Puree (½ cup + 2 Tbsp)
cup+ 2 Tbsp Non-fat Greek Yogurt85g
cupFlour80g
cupVanilla Protein PowderWhey-casein, 45g
cupUnflavored Protein PowderPlant-based, 45g
tbspCoconut Flour14g

Preheat oven to 350°F and line a loaf pan with parchment paper.
In a large bowl, whisk (hand mixer recommended) together mashed banana, pumpkin puree, yogurt, eggs and vanilla extract.
In another bowl, combine flour, unflavored protein powder, vanilla protein powder, baking powder, pumpkin pie spice and cinnamon.
Add wet mix to dry, and gently whisk until combined.
DO NOT OVER-MIX or protein powder will make the bread dense.
Pour into prepared loaf pan.
Top with pecans if you prefer.
Bake for 60 minutes, covering with a foil tent after 30 minutes.
A toothpick inserted into center should come out dry.
Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.
