Preheat oven to 375°F (190°C) and grease 4 small oven-safe dishes or ramekins.
Cube or tear white bread into small pieces.
Blend cottage cheese, almond milk, egg whites, vanilla protein powder, cinnamon, vanilla extract, and stevia until smooth. I recommend an immersion blender.
Pour bread into the custard, toss to coat, and let sit for 5-10 minutes.
Divide mix among ramekins and bake for 25-30 minutes until golden brown and set.
