In a large shallow bowl or container whisk together milk, egg white, vanilla protein powder.
Place sliced bread in mixture and let soak for about 1 minute. Flip, and soak other side for another minute.
Heat a large non-stick pan over medium-low and spray with cooking spray.
Place soaked bread on pan and cook for 2-3 minutes, flip, and cook other side for another 2 minutes.
Cook one slice at a time if using a small skillet.
Make Chocolate Spread:
In a bowl combine yogurt, chocolate protein powder and cocoa powder.
Make Pistachio Kataifi Mix:
Heat a nonstick pan and lightly toast kataifi.
Add in pistachio cream and mix.
Assemble:
Place one slice of french toast on plate. Spread half the chocolate mix on top.
Cover with other slice and remaining chocolate spread.
Top with pistachio kataifi mix.
