Preheat oven to 350°F and spray a 12-hole donut pan with cooking spray to grease.
Place biscoff cookies in food processor and blitz until crumbled.
In a big bowl whisk wet ingredients - applesauce, milk, yogurt, egg, melted butter
In another bowl, whisk dry ingredients - flour, vanilla and unflavored protein powder, baking soda and baking powder.
Add dry mix to wet and whisk until just combined.
Add in crushed biscoff cookies and fold with spatula.
Don’t over-mix
Divide mixture evenly among donut pan cavities, filling about ⅔-¾ way up.
Bake for 12-14 minutes or until a toothpick inserted into the donut comes out clean.
Let cool for 5 minutes and remove from pan. Transfer to a cooling rack to cool.
Topping:
Let donuts cool completely.
In a food processor, combine biscoff cookies, protein powder, milk and almond butter.
Use the back of a spoon or knife to spread frosting on top of donuts.
Top with crushed biscoff.
