Rice Cake Tiramisu is an easy twist on the classic Italian dessert. It’s made with rice cakes instead of ladyfingers, and protein powder instead of sugar, but just as creamy and delicious.

Whisk the Protein Cream: In a medium bowl, combine the softened cream cheese, Greek yogurt, vanilla protein powder, and milk. Whisk until the mixture is completely smooth.
The Quick Coffee Dip: Pour your cold coffee into a shallow bowl. Dip your first rice cake into the coffee, flipping it quickly to coat both sides.
Pro Tip: Be quick but gentle—you want it soaked but not falling apart!
Layer the Base: Place the soaked rice cake into a large ramekin or small bowl.
First Cream Layer: Spread half of your protein cream mixture over the rice cake, using the back of a spoon or a small spatula to smooth it into an even layer.
Repeat the Stack: Quickly dip the second rice cake in the coffee and place it directly on top of the first cream layer. Top with the remaining cream mixture and smooth the surface.
The "Set" Step: Cover the ramekin and refrigerate for at least 1 hour.
This allows the rice cake to soften into a cake-like texture and the flavors to meld.
