Superb Healthy Pistachio Pudding Dessert with layers of low-fat graham cracker base, high protein cheesecake and pistachio pudding, and whipped topping! Layered pistachio dessert lasagna uses protein powder for a low sugar treat.

Pistachio Pudding:
cupNon-fat Greek Yogurt225g
cupUnsweetened Almond Milk80ml
cupVanilla Protein PowderWhey-casein, 45g
tbspPistachio Instant Pudding Mix15g, Sugar-free recommended
Topping:
ozReduced Fat Cool Whip1½ cups, 112g, Thawed

In a food processor, combine crackers, cheerios, maple syrup and almond butter until crumbly.
Spread on bottom of pan and press down firmly with back of spoon or small spatula.
Cream Cheese Layer:
In a large bowl, beat cream cheese using an electric hand mixer or paddle attachment of stand mixer until smooth; About 30 seconds.
Add Greek yogurt and beat again until combined.
Beat in vanilla protein powder, scraping down the sides if needed.
Add milk if needed - little at a time - until spreadable, but thick.
Spread over base.
Pistachio Pudding:
In a bowl, mix Greek yogurt, protein powder, pistachio instant pudding, and milk until smooth.
Add milk a little at a time until pudding consistency is reached.
Spread over cream cheese layer.
Topping:
Spread cool whip on top of pudding and top with chopped pistachio.
Cover with plastic wrap and chill 1-2 hours in the fridge.
Cut into 9 pieces and enjoy.
