Apple Cider Donut Protein Cake that’s soft and flavor-packed just like your fresh-baked favorite fall doughnut. Healthy apple cider donut cake uses protein powder for sweetness, and sugar free homemade apple cider too. Low fat and low carb too!

Prepare Apple Cider:
Heat apple cider in a small pot over medium until bubbling; Reduce to simmer and cook until reduced to ½ cup.
Should take about 25 minutes. Set aside to cool (about 10 minutes).
Cake:
Preheat oven to 350°F and grease a 8x8” baking pan with cooking spray or use parchment paper.
In a large bowl, whisk reduced apple cider, almond milk, Greek yogurt, almond butter and egg.
In another bowl, mix flour, vanilla protein powder, unflavored protein powder, cinnamon, cardamom, nutmeg, baking powder and baking soda.
Add dry mix to wet and gently fold with a large spoon until just combined.
DO NOT OVER-MIX or the protein powder will make the batter tough.
Transfer batter into pan and bake for 18 minutes or until a toothpick inserted into the center comes out with just few crumbs attacked.
Let cool for 10 minutes and remove from pan.
Transfer to a cooling rack to cool.
Topping:
Brush top of cake with melted butter.
Sprinkle on sugar, and then slice into pieces.
