Line a 8x8” baking pan with parchment paper; Leave an overhang to lift out later.
Base:
In a bowl combine chocolate protein power, cocoa powder, oat flour and coconut flour.
Add in milk and red food color and mix. Mixture will be like a dough.
Add more milk if too dry, coconut flour if too wet.
Transfer into pan and press down with back of spoon or spatula.
Protein Frosting:
In a bowl, mix softened cream cheese (microwave 10 seconds to soften), yogurt and vanilla protein powder until smooth.
Mixture should be thick but smooth and spreadable.
Add yogurt if too thick, coconut flour if too thin.
Spread on top of base and use back of spoon/spatula or fingers to smoothen.
Place in freezer 10-15 minutes to harden.
Assemble:
Cut in half, and place one base+frosting layer on top of the other (cake base of one over icing of other).
Press down, and place in freezer another 10 minutes.
Drizzle on cashew butter or melted chocolate if needed.
