A perfect half baked S’mores Protein Mug Cake made with chocolate protein powder, and complete with grahams and marshmallow! This healthy S’mores mug cake is flourless, sugar free and fat free, but satisfies all the cravings for the summer dessert!

tbspCoconut Flour7g
cupUnsweetened Almond Milk60ml
Egg White33ml
sheetHoney Graham Crackers8g
tbspMini Marshmallows6g, or regular

Preheat oven to 350°F and lightly grease a 1 cup ramekin (or 1½ cup microwave-safe mug).
In a bowl, whisk chocolate protein powder, cocoa powder, coconut flour and baking powder.
Add almond milk and egg white, and stir until combined. Batter should be smooth.
Taste batter and add sweetener if needed.
Pour half batter into ramekin.
Add crushed graham cracker.
Pour remaining batter and top with more graham cracker chunks.
Bake for 10 minutes.
Top with marshmallows and broil 1-2 minutes (to toast marshmallows).
Top should be mostly set, but still slightly wobbly. It will harden when cool.

Microwave 2 min.
Let cool for a few minutes and enjoy!
